Sweet potato pizza with cashew spread
A delicious pizza base from sweet potato!
Peel and grate the sweet potato, add with oat flakes to a powerful blender. Mix. Add the remaining base ingredients and mix until smooth. Spread the dough on a baking sheet lined with parchment paper. Bake at 200°C for about 15 minutes.
Base ingredients:
- 1 medium sweet potato
- 1 dl oat flakes
- 2 tbsp coconut flour
- 1 egg
- Salt and spices to taste
Cashew spread:
- 1 dl cashews (soaked)
- 1 tbsp nutritional yeast
- 1 tbsp lemon juice
- Salt, garlic
Blend cashews with other spread ingredients until smooth. Spread on the baked pizza base, add your favourite toppings and bake for another 10 minutes.
A healthy and delicious alternative to regular pizza!
